Sun travel during New Years week. Where to go?

So many options, don't know where to start. We are looking for a beach front, all inclusive property, no more than $2500 each including a flight from canada. Any referals? Interested in water sports, great beach, great food, swim up bar, and nightly entertainment. Also, excursions to the local areas.
